I think, when I was younger, I was cooking to impress. Sometimes the dish would have 15 things on the plate. That's cooking only for yourself. As you get more mature, you take all the superfluous things away, and you get the essential flavor. Now I cook for people, not for myself.

I think the best thing about my job is that I have my life documented, which not many people get to have. They have a photo here and there and maybe some video footage from a birthday. My kids will be able to see me growing up.

I think all novels are contemporary. When people went to see 'Antony-Cleopatra' at the Globe in the 16th century, they were not going to get a history lesson on the Roman Empire. It was about love, sex, and also about dynastic troubles.

I love The Inn at Palmetto Bluff, an Auberge Property in Bluffton, South Carolina. It's a spectacular corner of the world, with massive old trees lined with Spanish moss, and alligators swimming in the river.
