I wanted to take nouvelle cuisine further, to the point where we were breaking down the essence of taste and sensation, reconfiguring food as a series of really intense hits on the tongue.

I always dreamed of writing in an orchestral context. But when you finish a piece, you want to hear it. So we played everything with Phish.

Now, what that means is that there is fundamental indeterminacy from quantum mechanics, but besides that there are other sources of effective indeterminacy.

We in the media have been guilty about not doing a better job of making people understand how really simple cooking is. We've made everyone feel like they have to be a chef.
