My food hero has to be Auguste Escoffier. And the villain? The man who's been most responsible for the death of food in my time is Ronald McDonald. He's always scared me, I think he's evil - he's a wolf in sheep's clothing. Him and the Hamburglar.

What I look for when I see a piece of art for the first time is some kind of emotional, intellectual experience, that's a combination of both of those things and is informed by my knowledge and something new that I see the artist doing.

The opportunity here in the U.S. is so unique because we are so diverse, with so many different cultures living together. Christians, Jews, Hindus, Muslims and Buddhists, all with their own connections to the spiritual aspects of food and with lessons that we can learn from each other.
